Ham and Cheese Roll with Curry Dip


As many of you of you know, I am a volunteer at the Ronald MacDonald House Berlin Wedding. Once I go and volunteer for 3 hours.....doing all sorts of stuff, from cleaning apartments to cooking for the families on thursday nights. We have a great crew that loves to cook and the cooking evenings are always a lot of fun. The recipe I am sharing with you today is the first course we served on Thursday Nite




The finished 1st course......Ham and Cheese Roll with a salad


Ingredients:

ready made pizza dough
cherry tomatoes
shredded cheese
ham 
zuchini

sour cream
curry spice

Directions:

Roll out pizza dough. First layer on the pizza dough....layers of ham or zuchini(for the vegetarians), then you add the shredded cheese. The tomates you line up on the bottom of the pizza dough. Roll up and bake for 35 minutes. Oven Temp: 350° F. The picture below shows you how the roll looks with zuchini.

For the sauce mix sour cream and curry spice.

Outdoor Cooking.........summer is almost here!

So, ready for summer? I so am.......totally have cabin fever.... It is not quite warm enough to sit outside, but it sure is warm enough to enjoy outdoor cooking on the grill! (Okay, who am I kidding we truly never stopped using the grill....)

The other day while at the grocery store I picked up these great large mushrooms(a lucky find). Perfect for filling with the peppers  I already had at home.

                                                                    


Filling: 2 red peppers, 1 yellow pepper, and 2 red onions, and the mushroom stems,  diced and cooked for about 5 minutes.

Panko bread crumbs nicely toasted




Fill the mushrooms with pepper/cheese filling (yes....add some shredded cheese to the pepper mixture)
Top off with toasted panko bread crumbs.




Oil the hot grill and place the filled mushrooms on the grill. Cover and cook for about 5-10 minutes. Serve immediately.

Little bites of heaven.......



Good Morning Everyone, I am writing my post Sunday Post this morning, as I am on my to Hamburg to see the Lion King on stage!

Friday Evening, our neighbors came for over dinner.......finally! We have all been either out with the flu, or busy with work. It was, as it always is a wonderful evening.

For New Recipe Sunday I am sharing with you a part of our desert last night.


Mandarine Oranges dipped in chocolate 
and a touch of sea salt





So easy.....Just dip mandarine orange slices in melted chocolate and sprinke with sea salt. Chill in fridge for a little while,.....serve and enjoy!

New Recipe Sunday is finally back! We are ready to take on 2015!

Please forgive the delay.....the flu took over my house and we are now finally all back to normal. For our first recipe this year...I would like to share with you all something simple, fast, and easy.....So simple, fast, and easy that I threw it together and it had on the table in 35 minutes!



Chicken Breast Filet with Mushrooms

covered in lots of Mozzarella cheese




So easy.....you just take the chicken breasts....season with your favorite seasonings (i used a "garden herb mix" that is actually for salad dressing, cover in olive oil and back for about 30 minutes in the oven(375°F) Shortly before you take it out, cover with mushrooms and cheese.

While the chicken is in the oven, make some rice, chill the wine, and set the table.

Rolls and Mushrooms......


This Sunday I would like to share with you all not one, but two recipes.

The first one is for all you THermomix Fans out there: Spelt Flour Rolls.
The second recipe is for all you veggie fans out there: Grilled Portobell Mushroom Burgers



Spelt Flour Rolls




Grilled Portobello Mushroom Burgers


Spelt Flour Rolls

Ingredients:   500 g Spelt Flour
                      1 1/2 Teaspoon Salt
                      250 g warm water  (must admit I forgot to make sure the water was warm :)  )
                      40 g fresh yeast (i used 2 bags that equal about 40 g fresh yeast)
                      a pinch of sugar

Directions:    Mix all ingredients for 2 min on the yeast cycle
                      Form rolls and place on baking sheet. Now you have 2 choices: 1. place rolls in a cold 
                      oven and bake at 200° C for 30 minutes. 2. let the dough rise for 15 minutes then place                         a preheated oven and bake for 25 minutes.


 Grilled Portobell Mushroom Burgers

Ingredients:    portobello mushroom caps
                       2 tbsp balsamic vinegar
                       1 tbsp soy sauce
                       1 tbsp olive oil
                       1 tbsp chopped rosemary
                       1-1/2 tsp steak seasoning like Montreal Steak Grill Mates
                       red onion slices
                       swiss cheese slices
                       tomatoe slices
                       avocado slices
                       baby spinach
                       spelt flour rolls

Directions:     In a bowl, whisk together soy sauce, vinegar, rosemary, and steak seasoning. Place the 
                       caps in the bowl and toss with sauce. Let stand at room temperature and marinate. The 
                       recipe I found online said to marinate 20-30 minutes. I of course got side tracked and 
                       ended up marinating for almost 2 hours! Grill the mushroom caps for 5-7 minutes per 
                       side. During the last minute of cooking, place the rolls on the grill, as well as the red 
                       onions.
                       Now to the fun part: assembly!  Place the spinach and grilled mushrooms on the buns
                       and top with the grilled onions, sliced tomato and avocado.


This meal was sooo good, I think I might just go vegetarian!

Happy Sunday Everyone! I am just done with the kitchen.....Thanks to my thermomix we had a great dinner......even got the cats seal of approval. You will understand more when you see the pictures.



 I was just in the process of taking some pictures for the blog, when I had to step away for a minutes. Will our adorable feline family member used this chance wisely.......


........at least he left me the rice and veggies......

Mango Salsa....YUMMY

Okay, so last night I was craving some mango salsa (and no I am not going to have a baby.... :) I have made mango salsa in the past, but of course  can not find the recipe when I want it. So, after a quick check on the internet...I came up with my version! OH so good.

The muffins in the picture are breakfast muffins I made a few weeks ago and froze.(The recipe for those to follow)

Ingredients:

1 Mango, diced
1 large red onion, diced
1-2 tomatoes, diced
Salt, pepper to taste
Cilantro, fresh if you have it
Garlic powder( i know, you might not think works, but...just try it)

So I finally get around to trying out this recipe for homemade coffee syrup that I found online long ago. So easy...... 





1. you boil one cup water and one cup sugar. Bring to a boil and reduce heat. 



2. for the carmel version, you add 1/2 cup carmel sauce once the water-sugar mixture has reached a
 boil.Simmer for 15-20 minutes .

3. Let cool and then fill into your favorite bottle.


ENJOY.


Please forgive, no picture of the final product....still have to make the pretty label and all. I promise to do that asap and then post it also. This coffee syrup will also make a great gift.

Grandma Jean´s Potato Salad



It´s midnight here in Berlin.....the jet lag is doing its job very well and I am wide awake! So, I thought I would take advantage of the time and share with all of you a new recipe... While I was visiting my sister in Chicago, her Mother in Law...aka Grandma Jean taught us to make her...

World Famous Potato Salad




1.  You take 4 pounds of red potatoes....


2. Place in pan with enough water to cover the potatoes...


3. add some sea salt and cook for app. 40 minutes...



5. The potatoes are done when a knife goes through easily.


6. Peel the potatoes immediately after they have been cooked. 





7. Slice and Cube the potatoes



8. Boil 6- 8 eggs


9. Peel and Slice the eggs with a egg slicer



10. Slice and Cube(very small) 6 large celery stalks







11. Slice one half of a very large sweet onion(app. 1 cup)



12. Add all ingredients to a large bowl and sprinkle with sea salt



Now the potato salad is ready for the  "gravy". Grandma Jean says it is best to make the sauce while the potatoes and eggs are boiling. This way it is ready when the potatoes are done.


13. In a mixing bowl, mix 1 1/3 Tablespoons apple cider vinegar, 1/4 cup skim milk, and 1 1/4 cup miracle whip


14. Add then 2 Tablespoons Grey Poupon and salt and pepper to taste. We added about 2-3 Tablespoons of sugar.



15. Mix untill the "gravy" has the consistency of pudding



16. Pour over the Veggie/Egg mixture and combine





And there you go......a delicious, beautiful potato salad...thanks to Grandma Jean!

A Tomato How To!

This week for new recipe Sunday, I would like to share a how to with you. A how to of how I prep my tomatoes when makeing my own Rotel Tomatoes for Sante Fe Soup. You see in Germany you can not get Rotel Tomatoes, but thanks to the Internet, I found a recipe that showed me how to make my own. First step is getting the tomatoes ready.



Step One, pour boiling water over the tomatoes. This will make the skin burst and a whole lot easier to peel.




Step Two, peel the tomatoes




Step Three, dice the tomatoes.


Step Four.....the green chilies...
